Mushrooms are rich in fibre and protein but low in calories, which makes them a healthy food choice. They are also very good source of vitamins B, Potassium and iron. Researches show that mushrooms can improve health and manage different health conditions. Mushrooms are high in antioxidants and they can help fight cell damage, improve brain function and support bone health.
Here is my favourite recipe to make incredibly meaty mushrooms.
Prep time 15 min
Serves 2 person
Ingredients:
Black pepper
Pink salt
Basil
Oregano
Olive oil
Curry
Curcuma
Method:
Add herbs & spices over the mushrooms in a small bowl. Mix well and press with your hands.
Place a pan over a high heat & add a little oil, when the pan is hot add mushrooms. Place another pan or metal bowl that is small enough to just fit inside the bottom pan on top, this compression will press mushrooms flat. Apply some pressure with your hands.
After 4-5 minutes of cooking and pressing, then flip them over. Continue to press the mushrooms for a further 5 minutes, making sure all the water has evaporated & they are going golden.
Serve it with gnocchi or cord bread and salad.
